{"id":573,"date":"2021-01-30T18:57:58","date_gmt":"2021-01-31T01:57:58","guid":{"rendered":"https:\/\/www.zucchinibaby.com\/?page_id=573"},"modified":"2021-01-31T19:48:00","modified_gmt":"2021-02-01T02:48:00","slug":"cheesy-breezy-stuffed-chicken","status":"publish","type":"page","link":"https:\/\/www.zucchinibaby.com\/?page_id=573","title":{"rendered":"Cheesy Breezy Stuffed Chicken"},"content":{"rendered":"\n<p>6 Boneless\/ Skinless Chicken Breasts<\/p>\n\n\n\n<p>5.2 oz Boursin Garlic &amp; Herb Cheese<\/p>\n\n\n\n<p>6 Tbs Bacon (Cooked &amp; Crumbled)<\/p>\n\n\n\n<p>4 Tbs Unsalted Butter (Melted)<\/p>\n\n\n\n<p>2.75 Oz &#8220;Everything&#8221; Ritz Crackers (1 Sleeve of Crackers)<\/p>\n\n\n\n<p>Smoked Sea Salt<\/p>\n\n\n\n<p>Black Pepper<\/p>\n\n\n\n<p>Preheat the oven to 375 degrees.  Butterfly the chicken breasts.  Place the butterflied breasts between two pieces of parchment paper and gently pound the breasts with a mallet.  They should be about 1\/4 inch thick.  Be careful not to go too far here.  Too much can change the texture of the chicken breasts and make them too thin to hold the filling.  <\/p>\n\n\n\n<p>Lightly dust the butterflied chicken breasts with smoked sea salt and pepper.  Divide the Boursin cheese evenly among the 6 chicken breasts, using a knife or small offset spatula to spread the cheese evenly over the chicken.  Sprinkle a tablespoon (or more if you&#8217;d like) of crumbled bacon over on top of the cheese.  Roll each butterflied chicken breast up like a jelly roll.  As you roll, gently tuck the thinner end of the chicken breast into the roll.  You want the rolls to be as evenly thick as possible- tucking in the thinner end while you roll will help with that.  Once rolled, insert three toothpicks through the chicken to help keep the rolls together while they cook.<\/p>\n\n\n\n<p>Crush the ritz crackers. Brush each chicken roll with butter and roll in the crushed Ritz crackers.  Once all six are encrusted in the crackers, dust the tops with a little more smoked sea salt and pepper.  Bake for 25-30 minutes, or until a thermometer registers 165 degrees.
